The recipe makes 10-12 cheese balls
Ingredients
1½ cups chopped spinach (paalak)
1 cup semolina (suji)
1 cup milk
3 tbsp oil
1 tsp chopped ginger
1 tsp chopped green chilies
½ tsp garam masala
½ tsp red chili powder
1 tsp salt, or to taste ½ tsp chaat masala
½ tsp dry fenugreek (kasoori methi)
1 tbsp softened butter 2 tbsp roasted peanuts - crushed roughly
FILLING
Cheese cube - cut into 1/2
Method -
1. Puree the chopped spinach leaves with 4 cups of milk in a mixer.
2. Heat oil in a pan. Add ginger and green chilies. Stir for a minute till fragrant. Add pureed spinach and cook for 2-3 minutes.
3. Add remaining milk. Reduce heat and add semolina and mix well.
4. Add butter, garam masala, red chili powder, dry fenugreek and salt to taste. Mix well and cook for 1-2 minutes till the mixture is dry. Remove from fire.
5. Add peanuts and chaat masala also to the mixture.
6. Make small balls from the green mixture.
7. Flatten and put a tiny cheese cube. Make a round ball again. Refrigerate till frying time.
8. To serve, deep fry and serve hot.

Make the balls, store freeze for a week (you can fry them when needed)
You can bake them as well
Fry it medium flame until golden brown.
Do not fry on high flame, else cheese oozes out.
