Cocktail Corn Fritters

This recipe serves 6-8

Ingredients -


large soft bhuttas or fresh corns (corns on the cob)

1 ½ tbsp gram flour (besan)

2 tbsp chopped green coriander

1 green chili - chopped

1 tsp salt or to taste

½ tsp pepper

oil for frying

lettuce leaves - for garnishing


MIXED CHUTNEY TO SERVE

½ cup tamarind (khatti mithi imli) chutney

½ cup green chutney

Method -

1. Grate the corns on the cob (bhutta).

2. Add gram flour, coriander, and chopped green chili to the grated corn. Mix well Keep aside.

3. At serving time, add salt and pepper. Mix well. Heat oil for frying. Drop 1 tbsp of batter in medium hot oil, with the help of a spoon.

4. Fry 4-5 pieces at a time till golden brown on both sides. Drain on a paper napkin

5. Mix both the chutneys to get a spicy sauce. Pour the sauce into a small bowl.

6. Line the plate with fresh lettuce leaves and place the hot corn fritters on it.

7. Dot each fritter with the prepared chutney. Serve hot.

 

Let's remember this -

  • Make the balls, store freeze for a week (you can fry them when needed)

  • You can bake them as well

  • Fry it medium flame until golden brown.

  • ½ tsp garlic paste, ½ tsp red chili flakes, 1 tsp salt, 3 tsp sugar, 1 tsp cornflour mixed with 2 tbsp water, ½ cup vinegar, ½ cup water, 1 tsp oil,1 tsp soya sauce,1 fresh or chopped dry red chili - very finely - To prepare the sauce, mix all the ingredients together. Stir over low heat until saucy and sugar dissolves. Keep sauce aside.

  • You can also add mozo cheese for extra drool
