Rasmalai is a quick dessert ready in under 35-40 minutes. Rasmalai (“ras” is juice or syrup and malai is “milk cream” in Hindi)is a Bengali delicacy relished by each Indian!! It's prepared by using Rasgullas (Soft chenna/cottage balls)soaked in rabdi (sweet simmered milk/reduced milk) garnished with saffron, cardamom and chopped almonds.
The taste of bread rasmalai may not match to the original rasmalai formula, yet positively it is significantly simpler and less lumbering.
Instant Bread Rasmalai Recipe
This following recipe is for 2-3 people
Ingredients
4-5 Slices of White Bread
1 litre of full cream Milk (to be reduced)
Condensed Milk(Optional)
1/2 Cup Sugar (if using condensed milk, check your sugar preference)
5-6 strands of Saffron
Almonds (Nuts for garish)
1/2 Tsp Cardamom
Method -
1. Boil the milk and reduce it to half (stir occasionally making sure the milk doesn't stick to bottom of vessel and get to a boil)once a layer of cream is formed over the milk,make sure to stir from bottom of vessel so that milk doesn't burn or stick the vessel.
Make sure the milk is reduced to half.
2. Add saffron for the rich color.
3. Add Sugar as per requirement (You can use condensed milk and adjust the taste).
4. Add Cardamom Powder for the extra aroma.
5. Finally, place the cut bread (you cut the bread slices in the desired shape) in the serving dish and pour the reduced milk and garnish it with chopped Almonds.
Let's remember this -
Serve the bread Rasmalai promptly, as bread turns too spongy or soft once absorbed rabdi. Please use fresh bread slices for better taste.
You can slightly toast the bread to avoid sogginess
Use White bread for better color and taste.
For better taste reduce the full cream milk rather than condensed milk.
Please reduce the flame while adding sugar, else the milk might split and dish would taste bad.
