Ingredients
For Dhokla Batter
1 Cup Besan/Gram Flour
1 Tbsp Fine Rava/Semolina
1/4 Tsp Turmeric Powder
1/2 Tsp ENO Regular
1 tsp Sugar
Pinch of hing / Asafoetida
1 cup Water
Salt
For Tempering
Oil
1/2 Tsp Mustard Seeds
1/2 Tsp Cumin
1/4 Cup Water
2-3 Chili
Curry leaves
Coriander(Fresh)
Fresh Coconut (Grated)
Method -
1. In a mix bowl add the sieved gram flour and rava(semolina).
2. Now in the mixture add turmeric,sugar, pinch of salt and salt.
3. To make a lump free batter, add ENO in the mixture and finally add water to make a batter.
4. Once the batter is ready check the consistency, steam the dhokla batter for 15-20 mins on low-medium flame in a greased utensil
5. In a heated pan add oil, mustard seeds, cumin, chilies, hing and curry leaves once the tampering is ready add a dash of water to the tampering and pour it on the cut dhoklas.
6. Finally, add the chopped coriander leaves and grated fresh coconut and serve it with mint and tamarind chutney.
Let's remember this -
Always sieve the gram flour for lump free batter.
You can use a steamer or even try in a microwave.
Adding sugar is optional.
In the batter, you can add ginger and chili paste for an extra kick.
Can use ENO/Fruit Salt/baking soda or citric acid for instant Dhokla.
Steam in on medium flame for 20 mins or till it is completely cooked.
Dhokla should be served hot or fresh.
