Authentic Nachos(cornmeal chips) is served with salsa,guacamole,veggies,cheese,sour cream and beans. Here, what we did is picked our favorite ingredients from our kitchen and tried our jusrandomly styles Nachos.
We used Tortilla Chips(readily available in the supermarkets), homemade instant salsa, veggies and cheese. We eliminated the beans as we generally don't prefer, we used Mayo as an alternative to sour cream.Moving with the recipe this is a highly customizable snack, you can add your ideas and let us know about it. You can use gluten free chips and load it with veggies to make it extra healthy.
Loaded Instant Cheesy Nachos Recipe
This recipe serves 1-2
Ingredients-
1 packet - Tortilla Chips/Corn Chips
1 Chopped Tomatoes
1 Finely Chopped Onion
Veggies (of your choice)
Boiled Sweet Corn (optional)
Olives (optional)
Jalapenos (optional)
Mixed Capsicums (optional)
Hot & Spicy Beans (optional)
Cheese (of your choice)
Sour Cream/Mayo (of your choice)
Cheese Sauce (optional)
Instant Fresh Salsa
2-3 Tbsp Tomato Ketchup (optional for extra zingy taste)
1-2 Tsp Chili Sauce
1-2 Finely Chopped Tomato
1 Finely Chopped Onion
1 Finely Chopped Green Chili
1/4 Tsp Chili powder
1/4 Tsp Lemon Juice
1 Tsp Sugar
Fresh finely chopped Coriander
Salt
Cheese Sauce
1 Tbsp Butter
1 Tbsp Flour
1/2 Milk
Salt
4-5 Tbsp Processed Cheese
Method -
To begin with the recipe first let's make the salsa -
1. In a bowl add the chopped tomatoes,onion,green chili,chili powder, sugar, Chili sauce, lemon juice, coriander leaves and salt to taste. Mix them well and keep them aside, until all flavors combine together.

2. In a bowl add tomato ketchup,chili sauce, tomatoes, onion and mix them together,your instant salsa is ready.
Cheese Sauce
1. In a preheated pan add butter and flour and mix them well(see to it that you don't burn them)
2. In the mix now slowly add milk and mix them well, ensure that there are no lumps formed.
3.Once the mixture starts to thicken,gradually add the grated processed cheese. Voila! Cheese Sauce is ready.
Loaded Cheesy Veggie Nachos
1.Spread the Nachos/Tortilla chips in a plate, now add the fresh salsa or the instant salsa.
2. Now, add the veggies of your choice,you can again add the salsa for the extra zing.
3. Drizzle the cheese sauce or grate a generous amount of cheese or even add mayo.(you can add both)
4. You can bake the Nachos at 180 degrees for 5-6 mins or until the cheese melts. (Instead of baking you directly eat it, if the loaded Nachos tempts you)
5.Loaded Cheesy Nachos are ready to serve ! You can serve the dish with mint mayo, mustard sauce, tartar dip or even cheese sauce and salsa.

There are various ways to assemble the Nachos, you can even layer it with cheese, nachos, veggies and repeat or just a single layer.
You can use gluten free chips too.
Instead of baking you can add cheese sauce/Grated Cheese/Mayo and just serve it. (Please ensure you do not drizzle hot cheese sauce, as chips may turn soggy)
