Makes 16 balls
Ingredients -
100 gm fine vermicelli (2 cups approx.)
½ tsp salt
1 tsp oil
½ tbsp crushed garlic
1 piece of ginger-finely grated
2 tbsp finely chopped beans
2 tbsp finely chopped cauliflower or broccoli
2 tbsp finely chopped carrot
1 tsp soya sauce
½ tsp vinegar
1 tsp brown sugar
½ tbsp red chili sauce
1 tsp salt oil for frying
Method -
1. Boil 4-5 cups water in a pan with 1 tsp oil & ½ tsp salt. Add vermicelli. Cook for 2 minutes. Drain and keep aside. Spread on a plate to let dry for 10 minutes.
2 Mash the boiled vermicelli with hands sticky and smooth enough to form a ball
3. Heat oil in a wok or kadhai. Add garlic and ginger. Cook for a minute.
4. Add broccoli, carrot and beans. Stir-fry for 3 minutes.
5. Add the soy sauce, vinegar, sugar, and chili sauce. Stir-fry for 1 minute. Add salt to taste.
6. Take 1 tbsp of boiled vermicelli. Make a ball. Press to make a depression in the center. Place some vegetable mixture in the center. Close the vermicelli around the filling, forming a ball again. Repeat with the rest of the vermicelli.
7. Heat oil in a wok or kadhai for frying. Deep fry the vermicelli balls until crisp and golden.
8. Serve hot with the chili sauce.

Make the balls, store freeze for a week (you can fry them when needed)
You can bake them as well
Fry it medium flame until golden brown.
½ tsp garlic paste, ½ tsp red chili flakes, 1 tsp salt, 3 tsp sugar, 1 tsp cornflour mixed with 2 tbsp water, ½ cup vinegar, ½ cup water, 1 tsp oil,1 tsp soya sauce,1 fresh or chopped dry red chili - very finely - To prepare the sauce, mix all the ingredients together. Stir over low heat until saucy and sugar dissolves. Keep sauce aside.
