This recipe serves 4-6
Ingredients -
WRAPS (PANCAKES)
1 1/2 cup flour (maida)
1 cup milk
½ tsp salt
1/2 tsp baking powder
oil for shallow frying
FILLING
½ cup shredded cabbage
1 medium carrot-grated
50 gm piece of tofu or paneer - sauteed in a pan till golden brown and cut into thin long pieces
1 1/4 tbsp oil
2 green chilies - finely chopped
1/2 onion (cut into half rings and separated)
4-5 flakes garlic-crushed
1 tsp soya sauce ½ tsp each of salt, pepper and sugar, or to taste
SAUCE
½ tsp garlic paste
½ tsp red chili flakes
1 tsp salt
3 tsp sugar
1 tsp cornflour mixed with 2 tbsp water
½ cup vinegar
½ cup water
1 tsp oil
1 tsp soya sauce
1 fresh or chopped dry red chili - very finely
Method -
1. Sift flour and salt. Add milk gradually, beating well to make a smooth thin batter for pancakes. Strain batter. Add baking powder. Mix well and chill the batter for 30 minutes.
2. Heat a nonstick pan (not too hot). Remove pan from fire. Pour 1 ladle (about ½ cup) batter on it. Tilt the pan to spread the batter evenly to a medium-sized pancake of about 5-6" diameter. Remove when the underside is cooked. Do not cook the other side. Make 4-5 thin pancakes. Cool the pancakes on a floured surface.
Before putting the second pancake on the first one, sprinkle some flour on the first one so that the two do not stick together.
3. To prepare the sauce, mix all the ingredients together. Stir over low heat until saucy and sugar dissolves. Keep sauce aside.
4. To prepare filling, heat oil, add garlic. Add chilies and onions and cook for 2-3 minutes, stirring occasionally.
5. Add carrot and cabbage. Add golden fried tofu or paneer. Add soya sauce. salt, pepper and sugar. Cook for 2-3 minutes. Mix and remove from fire.
6. Put 2 tbsp filling on each wrapper.
7. Fold the right and left side slightly, and holding on, roll upwards to make a parcel. Wet the edges to stick them together.
8. You can serve the spring wraps as it is in summers or pan-fried in 2 tbsp oil. Serve with the prepared sauce.
